Overseas students enjoy a taste of Chinese cuisine

The Chinese culinary culture program at Shanghai Polytechnic University's 2017 Shanghai Summer School proved to be very popular.

The school started on June 13, and will last for four weeks.

On June 15 and 16, students visited Zhonghua Vocational School, where they immersed themselves in the art of Chinese cuisine.

Senior chefs Lu Wenkang and Jin Bin started by explaining the theoretical basis of Chinese cuisine, such as the proper integration of seasoning, the balanced nutrition of ingredients, and the differences between Chinese and Western food.

The students also tried their hands at cooking several classic Chinese dishes, making a traditional dessert, and learning about Chinese tea culture.

Here are the five dishes the students mastered during their visit to the Zhonghua Vocational School.

Stir-Fried Shrimp

Ingredients: freshwater shrimp, green onion, fresh ginger
Seasoning: salt, MSG, dark soy sauce, light soy sauce, sugar
Feature: a fresh and delicious Shanghai dish with crispy skin and tender meat

Deep-fried Meat-stuffed Lotus-root Dumplings

Ingredients: lotus root, minced pork, flour
Seasoning: salt, MSG, dark soy sauce, sugar
Feature: a dish mostly enjoyed by people living in Central China's Hubei province

Fried Spare Ribs with Spiced Salt

Ingredients: spare ribs, flour
Seasoning: spiced salt, salt, MSG, dark soy sauce, light soy sauce
Feature: a classic Shanghai dish with crispy skin. It can also be seasoned with pepper, cumin and chili powder.

Braised Fishtail

Ingredient: tail of snakehead, fresh ginger
Seasoning: salt, MSG, sugar, dark soy sauce, light soy sauce
Feature: a dish best sampled by trying the fish meat with the soup

Sweet and Sour Spare Ribs

Ingredients: spare ribs, fresh ginger
Seasoning: salt, MSG, dark soy sauce, light soy sauce, white vinegar
Feature: a popular dish enjoyed by all Chinese people. The ribs are braised with a tender sweet and slightly sour flavor.
